Roast Tomato Salad With Rosemary Beans & Lentils Recipe

Soft, crunchy, munchy, salty and sweet - a real flavour sensation!

 

To feed 4:

2 - 3 big handfuls of tomatoes, any shape or variety

2 red onions

2 sprigs of rosemary, stalks removed

1 tin of lentils, drained and rinsed

1 tins of haricot, borlotti or butter beans, drained and rinsed

2 big handfuls of spinach leaves

A handful of mixed seeds

A handful of Violife Meditteranean block shavings

Sea salt

Freshly ground black pepper

Olive oil

 

Dressing:

Garlicky Tomato & Bean Salad

The addition of pulses to salads is always great when you fancy a lovely fresh salad but want to make sure its satisfyingly filling! With loads of fresh tomatoes, red onion, herbs and garlic this one’s a total winner.

Ingredients:

2 cans of white beans, either cannellini, haricot or butterbeans drained and rinsed

2 handfuls of tomatoes roughly chopped

2 red onions finely sliced

1 chilli, finely diced

Roast Squash & Charred Tenderstem Salad Recipe

This is a super tasty, robust, satisfying salad!

Ingredients:

1 butternut squash

4 cloves of garlic, crushed

2 sprigs of rosemary

1 bag Tenderstem broccoli

1 bunch of spring onions, white part only, finely sliced (keeping the green tops for the dressing)

2 baby gem lettuces cut into quarters

For the dressing:

Green part of the spring onions, finely chopped

1 clove of garlic, greed and finely mashed with the back of a knife

6 tbsp coconut yoghurt

1 tbsp white wine vinegar

Griddled Flat Peaches With Pistachio Recipe

These peaches are light, delicious and full of fresh flavour!

 

Ingredients to serve 4:

4 flat peaches sliced in half, widthways, and stone removed

300g soft vegan cheese of your choice or coconut yogurt

2 handfuls of pistachios, roughly chopped

A handful of fresh mint leaves, torn

The zest and juice of 1 lemon

Freshly ground black pepper

Sea salt

Olive oil

 

Method:

Green Pesto Minestrone Recipe

This is a delicious chunky soup - full of flavour and really satisfying if you fancy a bit lighter meal but still want something warm and comforting!

Ingredients to serve 4:

2 white onions or shallots, finely diced

2 cloves of garlic, finely chopped

1 large or 2 small courgettes, diced

2 pack of Tenderstem broccoli, chopped into 1 cm pieces

1 tin of chickpeas, drained and rinsed

2 tbsp good plant based quality pesto - We use the Bonsan Pesto available in our groceries selection

Balsamic Red Onions & Tomatoes with Chilli & Violife Greek Block Recipe

This is a real what-have-we-got-in-the-fridge dish… you could throw in wedges of sweet potato, slices of butternut squash or courgettes to really bulk it out… add a few escapee spears of asparagus!

Ingredients to serve 2 as a main course or 4 as a side dish:

2 red onions, peeled and cut into eighths

2 large or 4-6 medium sized tomatoes , halved

1 clove of garlic, finely sliced 1 chilli, finely diced

1 tbsp olive oil 1 tbsp balsamic vinegar

Thai Sweetcorn Soup Recipe

 

This is a delicious, hearty, soup - with the fragrant Thai curry paste, rich coconut milk, sweetcorn and rice - it’s bold, full of flavour and makes a really satisfying meal for lunch or dinner.

Ingredients to serve 4:

150g of white rice (or rice of your choice) OR leftover cooked rice

1 bunch (about 6-8) of spring onions, finely slice, widthways

1 chilli, finely chopped - remove the seeds if you don’t want as much heat!

3 cloves of garlic, peeled and grated

Bangin' Beet Salad Recipe

Bangin' Beet Salad!

Beetroot, lemon and mint make such a great team, combined with luscious spinach leaves, great olive oil and a sprinkling of cheeze this salad is an utter delight.

Serves 4

Ingredients:

2 large or 4 small Baked Beets

4 handfuls of spinach leaves

1 handful of mint

100g Violife Greek Block

For the dressing:

The zest and juice of 1 lemon

2 tsbp olive oil

Freshly ground black pepper

Sea salt

Smoky Sweetcorn Rib Recipe

This is a super funky way of serving sweetcorn and makes a delicious bowl of tasty finger food snack or side.

 

Ingredients for 2-4 portions:

2 cobs of corn

The juice of 1 lemon

1 heaped teaspoon of smoked paprika

1 clove of garlic, grated

1 red chilli, finely chopped

Worcestershire sauce

Sea salt

Olive oil

2 tablespoons of plant based mayo - we used The Vuger Co. Smoky ‘Bacon’ mayo

A small handful of coriander or flat leaf parsley
