Carrot & Coriander Falafel Burgers

Who doesn’t love a good burger?! These carrot & coriander falafel patties really hit the spot when you fancy something packed full of veg, full of flavour and something a little bit different. Serve them in a bun, naked with a pile of salad or topped on a baked mushroom and wrapped in griddled courgettes! And don't forget the chilli salsa!

Recipe Serves 4:

Ingredients:

Burgers:

2 tins of chickpeas, rinsed and drained
1 red onion, very finely diced
2 cloves of garlic, grated or finely diced
4 medium sized carrots, finely grated
1 big handful of coriander, finely chopped
4 tbsp chickpea flour
2 tsp Ras El Hanout or spice blend of your choice
Juice of 1/2 a lemon
Sea Salt
Freshly ground black pepper

Method:
1. Preheat the oven to 180c /350f/ gas mark 4.
2. In a food processor, blend the chickpeas until they are smooth then transfer to a large mixing bowl.
3. Add the red onion, garlic, grated carrot, coriander, chickpea flour, spice blend, lemon juice, a good pinch of sea salt and a pinch of freshly ground black pepper to the bowl. Mix everything together really thoroughly with your hands or a wooden spoon.
4. Divide the mixture into 4 equal portions and mould them into burger patty shapes.
5. Place a large frying pan over a medium to high heat and allow it to get hot. Brush the burgers with olive oil on both sides before placing them in the hot pan. Fry on both sides for 2 or 3 minutes or until golden brown before transferring to a baking tray and placing in the oven to bake for 20-25 minutes.

Here are a couple of condiments that will take your burger to the next level…!

Chilli Salsa:
2 medium sized tomatoes, finely diced
1 red onion, finely diced
1 red chilli, finely diced
Juice of 1/2 a lemon
2 tbsp olive oil

Mix together the tomatoes, red onion, chilli, lemon juice and olive oil together in a bowl. Cover and set aside until you are ready to serve.

Lime Yogurt:
4 tsp yogurt of your choice
The zest and juice of 1 lime
Sea salt

Mix together the yogurt, lime juice, lime zest and a pinch of sea salt. Cover and keep in the fridge until you are ready to serve.
