Celery & Apple Slaw

This is the perfect slaw for a hot, sunny day… crunchy, juicy, light and so refreshing!

 

Ingredients to serve 4 - 6 as a side:

4 sticks of celery 

4 spring onions

1/2 cucumber

2 apples

1 handful of fresh mint leaves 

The juice of 1 lemon

1 big handful of pumpkin seeds

Sea salt 

Olive oil

 

Method:

1. Trim the tops and tails of the celery sticks and spring onions before slicing them thinly. Pop them in a large mixing bowl and set aside.

2. Cut the cucumber into 3, lengthways before thinly slicing each piece widthways. Add the cucumber to the bowl.

3. Cut the apple away from the core and thinly slice to a similar shape as the cucumber. Add to the bowl with the veggies and squeeze over the lemon juice and mix everything together straight away to prevent the apple discolouring.

4. Finely chop the mint leaves and add them to the slaw. Add the pumpkin seeds, drizzle over 2 teaspoons of olive oil and season with a little pinch of salt. 

5. Jumble everything together with your hands to make sure the slaw is evenly mixed and serve!

 

We love this on its own, served with a BBQ or taken on a picnic.
