Cherries With Lime & Mint

This is a delicious combination of flavours… perfect for breakfast or served as a light, bright pudding!


Ingredients to serve 2:


2 big handfuls of cherries

The zest and juice of 1 lime

A couple of sprigs of mint

2 tablespoons of coconut yoghurt

A small handful of toasted coconut flakes



1. Remove the stones from the cherries either with a cherry pitter or by cutting them around the circumference to the pip, twisting them in half and removing the pip.

2. Place the pitted cherries in a mixing bowl then add the lime zest and juice.

4. Remove the mint leaves from the stalks and finely chop the leaves before adding them to the cherries. Mix everything together and divide into 2 serving bowls.

5. Top with the coconut yoghurt and a few toasted coconut flakes before serving!
