Whether you're stuffing it into a baked spud, scooping it up with a leafy salad or making a plant based 'toona' melt - this Chickpea 'Toona' mix hits the spot! Chickpeas are great for soaking up flavour and we've turned the volume up on the tasty ingredients to make this a lip smaking, delicious filling everyone will love!
Ingredients to make 4 portion:
1 jar of cooked chickpeas
1 small red onion, peeled and finely diced or grated
8-10 cornichons, chopped into tiny pieces
Plant based mayo - we love Rubies In The Rubble Vegan Mayo
Freshly ground black pepper
1. Drain and rinse the chickpeas under cold water. Tumble them into a mixing bowl and either with a potato masher or the back of a fork, crush all the chickpeas to create a 'flakey' texture.
2. Add the red onion and cornichons to the bowl.
3. With a micro-plane or fine grater, zest the lemon by gently grating the yellow rind, avoiding the white pith which is bitter, into the bowl with the other ingredients. Cut the lemon in half and squeeze in the juice, catching any pips with your other hand.
4. Add 2 heaped tablespoons of plant based mayo, a good pinch of salt and freshly ground black pepper to your taste and mix everything together really well. Have a taste to check you like the seasoning and serve!
If you don't use the whole batch at once, keep in the fridge and use within 2 days.
