The Club Sarnie Recipe

Arguably the best sandwich is the one you lovingly pile up using the glorious, delicious leftovers from your Sunday roast! This triple decker tower of deliciousness is a sandwich to top them all!

 

Ingredients per sandwich:

3 slices of bread, we love using Vegbred Sweet Potato Bloomer or Tin

2 leftover roast potatoes, sliced

A handful of leaves

1-2 spoonfuls of leftover red cabbage

1-2 tomatoes, slices

Mayo of your choice - plain or spiked with other funky flavours

Mustard of your choice - Dijon, English or Wholegrain

Salt and pepper

Olive oil

 

Assembly:

1. Place a frying pan on a medium heat and drizzle in 2 tablespoons of olive oil. Lay in the slices of potato and let them fry for 3 or 4 minutes on each side or until they have turned crispy and golden brown.

2. Lightly toast the bread then lay them out on a board, ready to assemble your sarnie.

3. On one slice of bread, evenly spread 1/2 tsp of mustard, scatter over a layer of leaves then followed by the watercress and sprinkle over a tiny pinch of salt and pepper. Evenly lay in the fried potatoes then top with the second slice of bread.

4. Smother the second layer of bread with a generous dollop of mayo then lay in the slices of tomato followed by a scatter of red cabbage.

5. Drizzle over a little olive oil and top with the third slice of bread.

6. Gently press down on your magnificent sandwich, cut in half, serve and tuck in!
