Creamy Cauli & Tenderstem Soup With Crunchy Toppings

This soup is pure warming comfort with a luxurious naturally creamy texture... a real treat to enjoy outside on one of those frosty, sunny days!

Ingredients To Feed 4:

2 white onions, roughly chopped

4 cloves of garlic, roughly chopped

1 head of cauliflower

1 big bunch of tenderstem broccoli

1 handful of mixed seeds

1 good quality vegetable stock cube disolved in 1 litre of boiling water

Sea salt

Freshly ground black pepper

Olive oil

For The Crispy Crunchy Toppings:

1. Preheat the oven to 180c/ 350c/ gas mark 4.

2. Take 1 stem of the Tenderstem broccoli and slice it into 4, lengthways, and pop them onto a roasting tray.

3. Break off a couple of florettes from the cauliflower, thinly slice them and add them to the tenderstem. Drizzle the veggies with olive oil and give them all a shuffle so that they are all lying flat in one layer. Pop in the oven for 15 minutes or until the veggies have turned golden and crispy around the edges.

To Make The Soup:

1. Remove the leaves from the cauliflower and break it up into small florettes then roughly chop the remaining tenderstem broccoli and set them aside.

2. Drizzle 2 tablespoons of olive oil into a large saucepan and place over a medium heat. Add the chopped garlic and onions, give them a stir and let them cook and sizzle for 4 or 5 minutes.

3. Add the cauliflower and tenderstem broccoli and allow to cook for a few minutes before pouring over the stock. If needed, add a little more water to make sure that the vegetables are fully submerged. Season with a good pinch of salt and pepper then bring to the boil. Cover with a lid and reduce the heat to simmer for 15 minutes or until the vegetables are soft and tender.

4. Allow to cool a little before blending in a free standing blender or with a hand blender, until super smooth.

5. Transfer back to the pan and adjust the seasoning if needed and bring the soup back to a simmer. Warm the crunchy toppings and serve the soup in warm bowls then scatter over the toppings.
