Creamy Garlic Mushroom & Kale Pasta

Quick, comforting and ooooh so creamy! Our garlic mushroom and kale pasta is a scrummy family favourite!

Serves approx 4:

250g of sliced mushrooms (about 2 handfuls)
4 x stalks of kale (removed the leaves from the stalks & give them a good wash then roughly chop)
1 x tin of chickpeas, drained & rinsed
1 x onions finely sliced
3 x garlic cloves - peeled and finely chopped
4 x sprigs of rosemary or thyme - remove from the stalks and finely chopped 
2 tbsp Oatly creme fresh or plant based cream of your choice
2 tbsp olive oil
Salt & pepper
Grated plant-based cheese for serving
Pasta of your choice

Method:

1. To get started, grab a good large pan fill it half way with fresh cold water. Pop the pan on a high heat to boil for your pasta.
2. Get another large frying pan and put on a medium heat with a good slug of olive oil. Scatter in the onions, garlic and herbs.
3. Allow these to cook, stirring regularly for a few minutes until soft (keep an eye on them and add a splash of water if they start catch).
4. Add in the mushrooms to the onions, garlic and herbs allow to cook down for 5 or 6 minutes, stirring regularly.
5. Tip the chickpeas in to join the mushrooms and stir together.
6.  Turn the heat down slightly if needed & stir in the creme fresh with a pinch of salt & pepper.
7. Meanwhile, the pan of water should be boiling and ready to add in your pasta. Cook your pasta of choice according to the instructions on the packet.
8. When your pasta is cooked (have a quick taste test) remove from the heat and drain leaving a small amount of the pasta water in the pan (this will help it not to stick)
9. Add your cooked pasta into the lovely garlicky mushroom sauce and gently jumble together with a pair of tongues or a couple of large spoons coating the pasta.
10. Grab your gorgeous kale and tumble it all into the pan and stir together into the pasta, allowing the heat to soften the leaves.

Have a quick taste test again and you are ready to serve.

Dish up into bowls and top with a generous sprinkle of your fav cheese - Tuck in and enjoy!!!
