Crispy Sliced Potatoes With Garlicky Paprika Mayo

These crispy sliced potatoes are a great alternative to chips to serve as a super side or snack!  

 

Serves 3 - 4

 

Ingredients:

700g Jersey Royals or Mid Season Salad Potatoes

Olive oil 

2 tablespoons of vegan mayo

1 clove of garlic

1 tsp sweet smoked paprika

The juice of 1 lime

Sea salt

Freshly ground black pepper

 

Method:

1. Pre-heat the oven to 180c / 350f / gas mark 4.

2. Scrub the potatoes under cold water then pat them dry with a clean tea towel or kitchen paper.

3 . Cut them lengthways into 1/2 cm slices and place them in a large mixing bowl.

4. Drizzle with 1 tablespoon of olive oil then tumble the potatoes making sure that they are all coated in a little oil.

5. Line a baking tray with greaseproof paper or a silicone baking sheet. Lay the potatoes in one even layer onto the tray then place in the hot oven to bake for 15 minutes.

6. Remove the tray from the oven and flip the potatoes over with a spatula before putting the potatoes back in the oven for them to bake for a further 20 - 25 minutes or until golden and crispy.

7. While the potatoes are cooking make the Garlicky Paprika Mayo.

8. Peel the clove of garlic then finely grate it onto a chopping board before crushing it to a pulp with the side of a knife. 

9. Place the garlic in a small mixing bowl along with the vegan mayo, lime juice, smoked paprika, a pinch of sea salt and freshly ground black pepper. Whisk everything together thoroughly and set aside until you’re ready to serve.

10. Once the potatoes are ready sprinkle them with a pinch of sea salt and freshly ground black pepper then serve them hot with the mayo dip!
