Fajita Gem Taco Recipe

 

You will LOVE these tasty tacos with a twist.

Super fresh crunchy gem lettuce leaves filled with fajita spiced chickpeas and veggies. These are So easy to throw together and loaded with flavour.

Make these your own - top with chilles, avocado, toasted crunchy seeds, spring onions a splash of spicy sauce, a squeeze a lime and a dollop of cool yoghurt or sour cream just to finish!

 

 

What you will need - This makes at least 2 for 4 people

 

1 x Whole gem lettuce.

1 to 2 peppers any colour - seeds removed and thinly sliced.

1 x red onion thinly sliced.

1 x tin chickpeas drained, rinsed and left to dry slightly.

2 x garlic cloves crushed or grated.

1-2 x tsp of fajita spice. This totally depends on how spicy you like it.

1 x lime

1 x avocado chopped roughly

A few spring onions washed & finely sliced

Olive oil

Optional - 1 x chilli deseeded and finely chopped & a few spoonfuls of yoghurt or sour cream.

 

Method

 

1) Firstly pop a an on a medium heat, add a drizzle of olive oil and gently cook your onions and garlic for a few minutes, stirring so not to stick (top tip, add a splash of water if they are sticking instead of more oil)

2) Pop your chopped peppers & chickpeas into a bowl. Sprinkle in your fajita spice and mix together with your hands.

3) Add these to the pan and gently mix and allow to cook for a few minutes until cooked but still crunchy.

4) Whilst this is cooking, prep and wash your gem lettuce.

5) Cut the bottom of allowing the leaves to come loose. Giver these a good wash and dry on a tea towel to pop in salad sinner if you have one.

6) Take your veggies off the heat.

7) Now time to put it together.

8) Get 2 gem leaves and layer them 1 on top the other.

9) Spoon is some of the fajita veggie mix. Do this with all your leaves.

10) Top each one with avocado, sprinkle with spring onions and a good squeeze of lime.

11) If you are going spicy, sprinkle with your fresh chilles

12) Finish with a dollop of yogurt on each one and a grind of black pepper.

Serve on a board to share - Tuck in and enjoy… OH you will need napkins!!!
