Fruity Spiced Parcels

These are lovely little bites to serve either mid morning with a lovely coffee or as an evening treat with a mulled wine!

Makes approx. 32

100g light olive oil
3 tablespoons of dark brown sugar
2 apples
2 pears
2 handfuls of mixed dried fruit or mixed vine fruit
1 tsp ground cinnamon
1/4 tsp ground clove
1 tsp mixed spice
1 pack of vegan filo pastry
Icing sugar for a snowy dusting

1. Pre-heat the oven 180c/ 350f/ gas mark 4.
2. Grate the apples and pears up to the core and place in a mixing bowl. Add the dried fruit and spices then mix together.
3. Pour the olive oil over the fruit mixture. Mix together thoroughly and set aside.
4. Prepare yourself with a clear work surface, a clean, damp, tea towel and a baking sheet lined with greaseproof paper.
5. Remove the pastry from the packaging and unfold it onto the surface. Keep the pastry covered with the damp tea towel at all times, taking out 1 sheet at a time as and when you need it - this is to prevent the pastry from drying out.
6. Take one sheet at a time and cut it into 8 equal squares.
7. In the centre of each square, spoon in a heaped teaspoon of mixture then brush the edges with a little olive oil.
8. Pull up each corner and bunch them together gently so that they hold together before placing them on the baking sheet. Continue until you run out of filling - you may not need all the pastry, in which case you wrap the remains in cling film and freeze it for another day.
9. When all your parcels are ready on the tray, pop them in the oven to bake for 15-20 minutes or until golden and crisp.
10. Transfer to a serving board or or cake stand and dust with the icing sugar for a snowy finish!
