Garlic Cauli Mash

 

A delicious, light alternative to potato mash!

 

Ingredients to serve 5 - 6 people:

2 heads of cauliflower, outer leaves removed

2 cloves of garlic, peeled

2 tablespoons of olive oil

Sea salt

Freshly ground black pepper

 

Method:

 

1. Break up the head into florets of equal size and chop up the core into small pieces then pace it all in a large saucepan along with enough water to half cover the cauliflower.

2. Add the cloves of garlic and a good pinch of salt.

3. Cover the pot with a lid and place it on a high heat and allow it to come to the boil.

4. Cook the cauliflower for 10 minutes or until it’s tender and can be crushed with the back of a fork.

5. Drain and allow to steam dry for a minute or two in the colander which will allow any excess water to escape. 

6. Transfer back to the pan, pour in the olive oil and season with a good pinch of black pepper then mash away.

7. Have a little taste to check that you’re happy with the seasoning and serve!
