Garlicky Potato Salad Recipe

The simpleness of this salad is so easy, super delicious and looks gorgeous too. 

For 2 - 4 portions:

500g salad potatoes, washed and scrubbed

1 - 2 cloves of garlic, peeled and mashed

1 bunch of spring onions, trimmed and finely sliced

Olive oil

Sea salt

Freshly Ground Black pepper

1 handful of fresh herbs - mint, parsely, coriander, dill



1. Place the salad potaoes in a saucepan and cover them with fresh water. Place the pan on a high heat and bring to the boil. Allow the potatoes to boil for 15 - 20 minutes until they’re tender and cooked all the way through. 

2. Drain the potatoes and allow them to cool a little while you prep the dressing.

3. In a large mixing bowl, mix together 2 tablespoons of olive oil with the mashed garlic and a good pinch of salt and pepper.

4. Once the potatoes are cool enough to handle, cut them into quarters, or smaller, depending on their size then tumble them into the bowl to coat in the dressing. 

5. Add the spring onions and tear in the mint leaves before gently mixing everything together. Have a little taste to check you’re happy with the seasoning and serve warm or at room temperature.


We love to take these on a picnic or served with a big leafy salad and chunky barbecued veggies!
