Hot Fruity Jumble

Team this fab fruity jumble with ice cream for a perfect Sunday pud… spoon it over porridge for breakfast… or gobble it straight out of the dish when no one is looking…!

For 4-6 generous portions:

Ingredients:
4 apples, core removed and sliced
4 – 6 plums, cut into quarters
1 punnet of blackberries
2 tbsp of mild honey, coconut sugar or demerara sugar
1 tsp vanilla paste or extract
1 sprig of rosemary leaves
1 lemon
2 handfuls of rolled oats
2 handfuls of pumpkin seeds
2 tsp ground cinnamon

Method:
1. Pre-heat the oven to 180c / 350f/ gas mark 4.
2. Put all the fruit, honey and vanilla paste in a good sized roasting dish and jumble everything together. Thinly peel the zest from the lemon and nestle them into the fruit along with the rosemary.
3. Pop in the hot oven for 20-25 minutes or until the has softened and caramelised around the edges.
4. Mix together the oats, pumpkin seeds and cinnamon.
5. Carefully remove the dish from the oven to give everything a little stir before topping with the oats and seeds. Put the dish back in the oven for a further 10-15 minutes.
6. Allow to cool just a little and serve!

By all means experiment with the ingredients in this recipe – swap and change the fruit, herbs, citrus and toppings to really make it your own!
