Hot Wok Tamari Greens

You can make these Tamari greens in minutes… you can always add some finely chopped chilli for a fiery kick.

2 leeks
 A portion of spring greens or half a green cabbage
Freshly ground black pepper
2 tbsp tamari sauce
Olive oil

1. Trim the tops and bottoms of the leeks and peel off the first layer and finely slice. Wash thoroughly in a colendar,

2. Finely shred your greens and wash thoroughly. 
3. Over a medium to high heat, add 2 tbsp olive oil in a wok, or large saucepan, if you don’t have one. Add the leeks, greens a good pinch of freshly ground black pepper and tamari sauce, tumble everything together with a couple of wooden spoons or a pair of tongs.
4. Allow to cook for 5-6 minutes, stirring regularly. Ideally, you want the greens to have wilted but still maintain a bit of a bite.

Serve as part of a meal or simply on their own, sprinkled with some toasted seeds as a tasty lunch!
