How To Bake The Perfect Jacket Spud!
There is something hugely comforting about a jacket potato - hot, humble, budget and time friendly - the ultimate 'eat well for less meal'! They take minutes to prep leaving the oven to do all the hard work then you can pile in your favourite filling for a delicious hug of a meal.
Ingredients:
1 big potato per person
Olive oil
Sea salt
Naturli butter
Method:
1. Pre-heat the oven to 180c / 360f / gas mark 4.
2. Scrub the potatoes in cold water then rinse them off and pat them dry with a tea towel.
3. Prick each potato all over a fork. With a sharp knife, carefully score a cross on the top of each potato.
5. Drizzle the potatoes with a little olive oil and sprinkle them with sea salt. Rub each potato all over to evenly spread the oil and salt.
6. Place the potatoes on a tray and put them in the oven to bake for 1 hour 15 minutes or until they are crispy on the outside and feel soft in the middle when you give them a squeeze.
7. Remove the potatoes from the oven and cut along the score lines then carefully open them up to reveal the soft fluffy potato!
8. Put a knob of butter in each potato to melt and enjoy as they are or stuffed with your favourite filling!
