Husked Baked Sweetcorn

Husk Baked Sweetcorn Recipe

No prepping, no faffing, it’s as simple as wash… bake… eat!

This is a brilliant, foolproof method of cooking corn in the oven if you haven’t had the chance to light the BBQ or the summer weather is a little on the wet side or you just fancy a simple tasty lunch. Of course, it is just as amazing on the BBQ, you just have to remember to rotate the corn 3 or 4 times throughout cooking.

We’ve suggested a few optional seasonings which go brilliantly with sweetcorn but it’s totally up to you!

1 ear of corn per person

Optional Extras…

Olive oil

Sea salt

Freshly ground black pepper

Finely chopped chilli

Chilli powder

Chopped chives

Chopped coriander

Wedges of lime

Lemon wedges

1. Pre-heat the oven to 180c.

2. Leaving the husks of the corn in tact, wash each ear of corn under cold water.

3. Place directly onto the bars of the oven and bake them for 25 – 30 minutes.

4. Once cooked, remove the corn from the oven using a pair of tongs or wearing an oven mitten.

5. To serve, using a tea towel to hold the corn in one hand then with the other hand, peel back the husk and fibres and simply twist them around themselves to keep them out of the way, taking care at all times of the heat and steam which they may omit.

6. Seaon with any of the desired!

We love them drizzled with olive oil, a sprinkling of sea salt, freshly ground black pepper, chopped fresh chilli and a squeeze of lime juice.
