Tex Mex Black Beans With Tomatoes

This is a versatile jumble of Tex Mex inspired flavours and satisfying ingredients. We love them as part of a picky board with a fresh cucumber and mint salad and a crumble of Violife Greek style cheese or ideal for piling on toast with avocado and fresh chilli.

 

Ingredients for 2-4 portions:

2 cloves of garlic, peeled and grated

1 red onion, peeled and finely diced

A handful or 150g vine tomatoes

1 jar or tin of black beans, drained and rinsed

Dried oregano or mixed dried herbs

Paprika Potato Salad & Roast Garlic Dressing

Salads sometimes have a bad rep of being boring not filling… well not this salad! We’ve packed in satisfying potatoes, crunch and a delicious roast garlic dressing and it’s very simple to put together - you’ve got to give this one a go!

 

Ingredients to serve 3-4 people:

2 medium to large potatoes

2 cloves of garlic

1-2 tsp smoked sweet paprika

1 red onion

1 red pepper

2 big handfuls of rocket leaves

The juice of 1 lemon

Olive oil

Sea salt and black pepper

Fresh Five Veg Rice Salad

This is a really great salad to have up your sleeve - it’s fresh, packed full of 5 different veggies, filling and the bonus is that it can be made in advance or prepped for a lunch on the go!

 

Ingredients for 4-6 servings:

200g / 2 cups of uncooked rice rinsed

1 courgette

1 pepper

1 red onion

3-4 sticks of celery

1 big handful of parsley

1 lemon

1 clove of garlic

2 tbsp olive oil

Sea salt

Black pepper

Brilliantly Basic Tomato Sauce 

This is how to make the most deliciously simple tomato sauce - forget the jarred stuff - once you've made your own and realise how simple it is, you'll never go back. It's tastier, better for you and you can totally make it your own! It's perfect for a simple pasta but is also great for a nacho dip, poured over potato wedges or topped over veggies on toast.

 

Ingredients:

1 tin of good quality chopped tomatoes

1 x red onion finely chopped 

2 cloves of garlic finely chopped 

Gorgeous Green Pesto Pasta 

Gorgeous Green Pesto Pasta 

We all have those days when only a bowl of pasta will hit the spot! This Gorgeous Green Pesto Pasta involves zero faff, it's one our favourite basic recipes - real food for real life - full of flavour and full of chopped veggies so you know you're getting the good stuff ticked!

Serves approx 4:

1 courgette chopped 

1 handful of Tenderstem broccoli chopped 

1 handful of mushrooms finely sliced 

2 cloves garlic finely chopped 

1 large heaped tbsp of green pesto (we used Bonsan)

Cheezy Leeks

Oozey, gooey, comforting, quick and totally delicious! We're not really sure what to say other than Cheezy leeks is our new favourite! 

Serves 2 to 4 

2 leeks finely chopped and washed

2 handfuls of grated cheeze - we used Violfe cheddar

Salt & pepper for seasoning 

1 tbsp Olive oil 

Couple of slices of your favourite bread toasted - we used Vegbred Sourdough.

1. Grab a shallow pan and pop on a medium heat. 

Coconut Ramen

This is the ultimate reset Ramen - A bowl of tasty energising goodness! You can serve this punchy soup as it is or with cooked noodles or rice. Make it your own by adding whichever veggies you fancy - shredded kale, leeks, watercress or cauliflower!

 

Ingredients for 2-3 people:

1 tin of coconut milk

1 vegetable stock cube

1 shallot, peeled and finely diced

1 - 2 chillis, seeds removed and finely sliced

2 cloves of garlic, peeled and grated

1 big thumb sized piece of ginger, peeled and grated

Boxxfresh Super Noodles

This is a serious delicious, quick, fresh pan of noodles - ideal for a speedy mid week meal or when you're craving a delicious home made 'fake-away'!

Ingredients to feed approx 2:

1/2 tablespoon miso paste

1 tbsp tamari

2 tsp maple syrup

The juice of 1 lime

2 cloves of garlic, peeled and grated

A big thumb sized piece of ginger, peeled and grated

1 pack of firm tofu, diced into chunks (we used the marinated Dragonfly tofu that we stock on our shop) 

1 romano pepper, deseeded and sliced

Winter Root Rosti Traybake

This is a brilliant all-in-one recipe for a time savvy mid-week meal. Simply shred the veg, jumble it all together with some seasoning and let the oven do the work - leaving you free to do other things!

We love a pile of this Rosti tray bake with a munchy salad, or served as part of a weekend brunch with homemade baked beans and garlic mushrooms!

 

Recipe to serve 4:

2 potatoes

4 or 5 carrots

2 white onions

4 sprigs of thyme

2 tsp smoked paprika

Olive oil

Sea salt and black pepper
