Plantbased Bang Potatoes Recipe

Theses Boxxfresh Bang Potatoes are our take on the classic Bombay potatoes, using one of the Bang Curry Kits - serve them as part of a curry feast, pile them in a wrap with avocado and yogurt or simply enjoy them as they are! 

 

Ingredients to serve 4-6:

1kg potatoes

Super Simple Curried Carrot & Chickpea Burger Recipe

Serve these stacked into a burger bun with all the trimmings, pile onto a delicious crunchy salad or enjoy simply as they are with a dollop of mango chutney.

What you will need to make 4 burger patties. 

1 x  400g can of chickpeas drained & rinsed

1 x Red onion peeled and finely chopped

2 x Carrots washed & grated

2 x Garlic cloves peeled & crushed or chopped

1 - 2 x tbsp curry powder

2 x tbsp of plain flour

50g parsley  washed & finely chopped

Salt

Pepper

Olive oil

Butternut Squash & Coconut Dahl Recipe

This is a delicious Dahl that packs in loads of the good stuff! Mildly spiced but full of flavour and perfect served with warmed flatbreads for a satisfying meal.

Ingredients for 4 - 6 portion:

1 butternut squash

2-3 red onions

2-3 cloves of garlic

2 or 3 big handfuls of spinach

1 tin of coconut milk

1 pack of BANG! Dhaka Dahl Kit

Olive oil or cooking oil of choice

1 lime

Method:

1. Pre-heat the oven to 180c / 360f / gas mark 4.

TLT Club Sandwich Recipe

A double decker sandwich of greatness - this one really hits every flavour and texture spot a cracking’ sarnie should!

 

Ingredients per sandwich:

3 slices of firm tofu

1/4 a small red onion, peeled and finely sliced

1 tsp mixed herbs

3 slices of bread of your choice - we love the Vegbred tin loaf

Plant based mayo of your choice

Eaten Alive Smoked Sriracha sauce (optional)

1-2 tomatoes, sliced

6-8 slices of cucumber

Healthy Veggie Cheezy Scone Recipe

Serves 4-6

A super easy recipe - giving you a deliciously cheezy large scone for sharing… perfect for lunch, savoury brekkie, side for soup or just a super snack.

 

Ingredients:

2 cups (300g) white or wholemeal self-raising flour

1tsp baking powder

50g non dairy butter - we use naturali vegan block

1/2 cup of fresh herbs of choice or 1tsp of dried.

1 cup of finely grated carrot (approx 2)

1/2 cup of greens finely chopped - spinach, kale & leek work really well.

Blistered Padron Pepper Recipe

Wether you've had these on a sunny Spanish holiday or not, you'll love these little green peppers to share with friends and family with a refreshing drink! Padron peppers have a lovely bitterness that goes so well with olive oil and sea salt - just beware of getting the rogue hot ones!

 

Ingredients:

200g Padron Peppers

Olive oil

Flakey sea salt - we use Maldon

 

Method:

1. Wash and dry your patron peppers before you start cooking.

Making your own pickled onions can sound difficult or daunting BUT seriously this is simplest, quickest way so GET PICKLING!!

Top Tip : These punchy pink pickled onions are perfect for piling on top a salad, jazzing up a sandwich & of course stacked on top a burger or hot dog!

What you will need

2 to 3 red onions

2 x tbsp of agave or maple syrup

4 x tbsp of apple cider vinegar

Juice of 1 lime
