Sticky Asian Orange Aubergines Recipe

This is a great way to cook & enjoy our delicious seasonal Blood Oranges - they have a distinct bitter sweet flavour which makes them wonderful  in savoury dishes.
These aubergines turn gorgeously sticky, gooey and are lip-smackingly delicious. 

Serve with rice or noodles with all the leftover juices in the dish!

 

Serves 2:

1 Aubergine

2 Blood Oranges OR ( regular oranges/ satsumas) 

1 thumb sized piece of ginger, peeled and grated

2 cloves of garlic, peeled and grated

Garlicky Kale With Butterbeans And Chilli Recipe

This delicious jumble of kale and soft garlicky beans is a bowl of whole food goodness that will become a favourite. 

The goodness of kale needs no introduction - we all know its good for us with its high VITAMIN A, K and C content, let along HIGH FIBRE! Butterbeans are not only buttery pillows of loveliness there also pack a punch when it comes to nutrition… they're a great source of PROTIEN, FIBRE & GOOD WHOLE FOOD CARBS.

Veggie Lasagne Recipe

 

This is a family staple that we have tweaked into a completely plant based version. 

The finely chopped veggies mixed with lentils and tomatoes cooks down into an amazingly delicious sauce that would give any regular lasagne a run for its money!!! 

Serves 6

RAGU SAUCE :

2-3 red onions 

5 garlic cloves 

A good splash of tamari -  approx 2 tbsp

Woody herbs fresh or dried ( 1 1/2 tsp thyme, oregano if dried) 

Mushroom Chowder Soup Recipe

Think of this as a delicious cross between a Risotto and a broth - it's real comfort food, a complete meal and a soul soothing, warming bowl of goodness for a Wintery day! 

 

Ingredients to serves  4 - 6 :

450g x mushrooms grated or finely chopped 

1 x white onions finely chopped 

2 x garlic cloves peeled and finely chopped

200g Caulishoots washed and finely chopped

1 x tsp mixed herbs or fresh thyme (leaves removed and chopped)

1 carton Oatly cream ( 250ml)  

Healthy Speedy Chickpea Curry In A Hurry Recipe

This is a super healthy, quick, flavour packed curry - perfect for a speedy mid week meal, serve with cruncy popadoms, warm naan, fluffy rice or even piled into a baked potato. 

Ingredients to serve 4 - 6 people:

2 white onions, peeled and finely sliced

3 cloves of garlic, peeled and finely chopped or grated

1 large thumb sized piece of ginger, peeled and grated

2 jars or tins of chickpeas, drained and rinsed

1 tin of tomatoes

1 can of coconut milk 

Punchy Parsley Pasta Recipe

This is a SERIOUSLY GOOD pasta sauce which is really simple to make and packed full on lip-smacking flavour… not much more to say than “ You must give this go!!”

Serves 4:

4 cloves of garlic, peeled and minced or finely grated

2 lemons

1 chilli, finely diced

100g / 2-3 big handfuls of flat leaf parsley

150g / 2 handfuls of tomatoes

A bowl of tasty, wholesome rice and veggies - is there anything more delish!? This dish is ideal for using up the last few veggies in the fridge before stocking up on more of the good stuff, so grab a bowl and get stuck in!

Serves approx 4:

2 small / 1 large onion finely chopped

2 garlic cloves crushed or finely chopped 

4 carrots 

1 leek 

200g Tenderstem Broccoli 

A few mushrooms 

1 tsp Mixed Herbs

2 tbsp Tamari 

1 veggie stock cube 

250g of brown rice 

1 tbsp of olive or coconut oil

4-5 shallots - peeled and cut into quarters

4 cloves of garlic crunched or finely chopped

2 tbsp olive oil  

1 bunch of carrots washed and cut into large chunky slices

Make these beans with any bean or pulse you have in the cupboard - we’ve made them with anything from cannelloni, butterbeans, black beans, chickpeas or lentils and even mixed mixed together - they’re all delicious!
