Kale, Fennel & Tempeh Salad
This kale salad is so quick to throw together. Massaging the kale softens the leaves so no cooking required, meaning a super green veggie salad in mintues!
Serves 4
Ingredients:
3 - 4 large handfuls of kale washed and roughly torn
1/2 a bulb of fennel washed & finely sliced
1 pack of Tempeh - we used the Tiba Tempeh marinated pieces
Some toasted pumpkin or sunflower seeds
Olive oil
Juice of 1 lemon
Salt & Pepper
Method:
Your will need a large bowl.
1. Start by adding your raw kale to the bowl. Drizzle with a little olive oil and with your hands gently massage the leaves. This will very quickly soften the kale so its makes delicious, super green salad leaves.
2. Add your shredded fennel, tempeh pieces, a good squeeze of lemon and a pinch of salt & pepper.
3. Give this a good jumble together… with your hands is the easiest.
4. Finish with a generous sprinkle of toasted seeds.
Pile into bowls and get stuck in!
