Kale & Potato Soup

This soup is as frugal as it is comforting and delicious… soft potatoes, sweet onions and nourishing kale in a savoury-sweet broth! 


Ingredients to serve 4 - 6 people 

2 white onions

2 cloves of garlic

2 sprigs of rosemary, leaves only

2 medium sized potatoes

2 good quality vegetable stock cubes

4 or 5 stalks of kale

Sea salt

Freshly ground black pepper

Olive oil



1. Peel and dice the onions then finely chop the garlic and rosemary. 

2. Pour about 1 tablespoon of olive oil into a large saucepan and place it over a medium heat.

3. Add the onions, garlic and rosemary, mix everything together and allow to gently sizzle, stirring occasionally for 10 minutes.

4. Meanwhile, peel and dice the potatoes roughly into 2 cm cubes, add them to the mix then give everything a stir.

5. Dissolve the stock cubes in 500ml of boiling water before pouring into the pot, followed by enough boiling water so that the water level reaches at least an inch above the veggies.

6. Bring to the boil then reduce the heat to a simmer for 20 minutes or until the potatoes can be crushed against the pan with the back of a spoon.

7. Meanwhile, strip the kale off the stalks then finely chop the leaves.

8. Tumble the chopped kale into the soup and allow it to wilt and cook for a further 5 minutes.

9. Season to taste with a good pinch of sea salt and freshly ground black pepper.

Serve in warm bowls… slurping my be essential!
