Lemon Garlic Butter Sauce

This is a lip smacking, delicious sauce perfect fro drizzling over our 'No-Fish Cakes', over a pan of wilted greens or stirred through pasta!

 

Ingredients for 4 - 6 portions

1 tbsp olive oil

1-2 cloves of garlic, peeled and finely minced or grated

80g of natural butter

The juice of the 1 lemons from the cakes

A small handful of parsley, finely chopped

Sea salt

 

Method:

1. Put the the olive oil in a sauce pan over a medium heat and add the garlic. Stir the garlic into the oil and let it gently sizzle for a couple of minutes until it softens.

2. Add the butter to melt into the garlic and let it gently bubble for 2 or 3 minutes, stirring regularly. You’ll notice the butter thickens a little.

3. Add a pinch for salt then the lemon juice 1 tablespoon at a time, whisking it into the sauce as you go.

4. Take the sauce off the heat, allow it to cool a little then add the chopped parsley, stir through and serve!
