Lemony Seedy Beans

This is a great little side dish to serve with anything from a Sunday roast, a summer BBQ feast or taken on a picnic!


Serves 2 - 4

200g green beans, trimmed

1 lemon

1 handful of mixed seeds

Olive oil

Sea salt 

Freshly ground black pepper



1. Zest the lemon with a fine grater and place the zest into a small bowl. Drizzle over 2 tablespoons of olive oil, season with a pinch of salt and pepper and mix well then set aside.

2. Fill a medium size saucepan three quarters full of water and add a good pinch of salt before placing the pan on a high heat. Bring the pan of water to the boil.

3. Once the water is boiling, gently drop the green beans in allow them to cook for about 10 minutes or until they are just cooked and tender.

4. Drain the beans through a colander then set it on top of the pan. Allow the beans to steam in the colander for a minute before transferring them to a mixing bowl.

5. Drizzle over the lemony oil then sprinkle over the seeds.

6. Serve straight away or at room temperature.
