Loaded Potato Twice Baked Potatoes

 

These loaded twice baked potato skins are super tasty, fun and make a great Friday night or weekend treat! 

 

Serves 4 - 6

4 - 6 medium sized potatoes 

1 red onion, peeled and finely diced

2 cloves of garlic, peeled and grated

A handful of flat leaf parsley, finely chopped

2 tsp Wholegrain or dijon mustard

Vegan cheese of choice, grated or sliced - we love Violife Cheddar style block (optional)

Sea salt 

Freshly ground black pepper

Olive oil

 

Method:

 

1. Pre-heat the oven to 180c / 360f / gas mark 4.

2. Scrub the potatoes and prick them all over with a fork. Place them on a roasting tray and pop in the oven to bake for 45 minute to 1 hour or until they are crunchy on the outside and you can easily pierce through to the centres with a sharp knife.

3. Meanwhile, place a frying pan over a medium heat, pour in 1 tablespoon of olive oil. Scatter in the onion and garlic and gently cook for 5 to 10 minutes or until the onions soften and caramelise around the edges, stirring regularly. When they’re ready, set aside. 

4. Remove the potatoes from the oven and allow them to cool slightly.

5. Once the potatoes are cool enough to handle, cut them in half, lengthways. Scoop out the fluffy centres with a spoon, leaving behind about 1 cm of the potato with the skins. Place the middles into a bowl and lay the skins cut side up back onto the tray.

6. Add 1 tablespoon of plant based butter to the potatoes and mash the potatoes with the back of a fork or potato masher. 

7. Add the fried onions and garlic to the bowl, followed by the parsley, mustard and a good pinch of sea salt and black pepper. Mix everything together with a fork until all the ingredients are well mingled.

8. Spoon the now deliciously seasoned potato mixture, equally, into the potato skins and squish the mixture firmly into place.

9. You can either bake the potatoes as they are or, if you’re adding cheese, scatter over the top of the loaded potatoes.

10. Place the tray of potatoes into the oven and bake for 20-25 minutes or until they’re golden on top and serve!
