"No Egg" Fried Rice

This is our super tasty, plant based version of egg fried rice! It’s full of delicious flavour and really quick to prepare. We love it by itself or topped with toasted nuts, shredded carrots, a tangle of watercress and sliced avocado!

Ingredients for 4:

About 2 cups / 500g Cooked Rice

1 block of firm tofu

1 bunch spring onions, finely sliced

1 clove of garlic, peeled and grated

Chinese 5 spice

Tamari Sauce

Toasted sesame oil

Black or white sesame seeds

Coconut or olive oil 



1. Drain the tofu and break it up with your hands into a small bowl. Sprinkle over 2 teaspoons of the Chinese 5 Spice and pour in 2 tablespoons of Tamari sauce. Mix everything together so the tofu is coated into the seasoning and set aside.

2. Place a large frying pan or wok over a medium to high heat and spoon in 1 tablespoon of coconut or olive oil. Scatter in most of the spring onions, holding back about a handful for later. Stirring regularly, fry the spring onions for 2 or 3 minutes or until they soften.

3. Add the garlic to the pan, mix together with the spring onions and fry for another minute. Add the seasoned tofu and continue to cook for 5 minutes, stirring occasionally.

4. Tumble in the cooked rice and carry on cooking for another 5 minutes or until the rice is piping hot, stirring regularly.

5. Add the remaining spring onions, sprinkle over a couple of teaspoons of sesame seeds and add a few dashes of toasted sesame oil to your taste. Give everything a final tumble and serve!
