Oven Roast Sweet Potato Fries

Oven Roast Sweet Potato Fries

Who doesn’t love chips?!

Sweet potato chips and fries have become mainstream as our beloved traditional version and it’s super simple to make your own. The lovely sweet flavour of sweet potato makes a really good base flavour for spices so we love coating them in whatever spice mix goes with the other dishes we want to serve… from Cajun, Creole and Chinese 5 spice to Tex Mex, Moroccan or Garham Masala - anything works! Be inventive!

Serves 4 :

2 Big sweet potatoes (about 1kg) washed & crumbed

Sea salt

Freshly ground black pepper

Spice mix of your choice - Fajita mix, cajun spice, Chinese 5 spice, Ras El Hanout - it’s totally up to you!

Olive oil

1. Pre-heat the oven to 180c / 360f / gas mark 4. Line a roasting tray with greaseproof paper or a silicone mat.

2. Leaving the skin on, cut the sweet potatoes, lengthways into roughly 2cm slices. Cut each slice, lengthways again into chip shapes!

3. Place all the chips on the lined tray, sprinkle over a pinch of sea salt, pepper and 1- 2 teaspoons of your chosen spice mix. Drizzle over a tablespoon of olive oil and tumble all the chips around until they are evenly coated with seasoning and oil.

4. Make sure the chips are evenly spaced on the tray before popping them in the oven.

5. Roast for 35-40 minutes or until caramelised around the edges.

6. Sprinkle with another little pinch of the spice mix and serve!

Serve as part of a feast… but, who needs an excuse to just rustle up a tray of chips for a tasty snack?!
