Paprika Potato Salad & Roast Garlic Dressing Recipe

Salads sometimes have a bad rep of being boring not filling… well not this salad! We’ve packed in satisfying potatoes, crunch and a delicious roast garlic dressing and it’s very simple to put together - you’ve got to give this one a go!


Ingredients to serve 3-4 people:

2 medium to large potatoes

2 cloves of garlic

1-2 tsp smoked sweet paprika

1 red onion

1 red pepper

2 big handfuls of rocket leaves

The juice of 1 lemon

Olive oil

Sea salt and black pepper



1.Pre-heat the oven to 180c / 320f / gas mark 4.

2. Wash, dry and roughly chop the potatoes into bite-size chunks. Scatter them onto a baking tray, sprinkle over the paprika, a pinch of salt and drizzle over a couple of teaspoons of olive oil. Tumble the potatoes until they’re all well coated in the oil and paprika.

3.Place the unpeeled cloves of garlic on a board and with the side of a knife, carefully crush it by giving it a knock with the palm of your hand. Tuck the crushed garlic into the potatoes then put the tray in the oven. Let them roast until they’re tender in the middle and turn crispy around the edges.

4.Meanwhile, slice the pepper in half, remove the green stalk, then roughly chop the pepper about the same size as the potatoes. Peel the red onion, trim the tip and root then slice as thinly as possible. And set them aside.

5. Once the potatoes are cooked, remove the tray from the oven and set them aside to cool a little while you make the dressing.

6. To make the dressing find the cloves of garlic amongst the potatoes - it will have roasted and turned sweet and jammy! Peel away the papery skin and pop the garlic into a large mixing bowl then mash the garlic with the back of a fork. Pour in the lemon juice, 2 tablespoons of olive oil and add a good pinch of salt and pepper then whisk it all together. Have a little taste to check you’re happy with the amount of salt and pepper and adjust to your taste.

7. Tumble the potatoes into the dressing, followed by the sliced onions, chopped peppers, rocket leaves and with clean hands give everything a really good jumble, making sure that everything is coated nicely in the dressing.
