Paprika Sauzage, Potato & Butterbean Casserole Recipe

A hearty, delicious, warming casserole! This one pot winner is full of flavour, simple to put together, leaving the oven to do all the hard work!


Ingredients to serve 4-6 people:

1 pack Meatless Kabanos Sausages

2 red onions, peeled and finely sliced

4 cloves of garlic, peeled and grated

2 medium to large potatoes

1 tin of butterbeans, drained

2 tins of tomatoes

2 tbsp tomato puree

2 teaspoons of smoked paprika

2 teaspoon of fresh thyme leaves or 1 teaspoon of mixed herbs

1 bag of spinach, washed and roughly chopped

Sea salt

Freshly ground black pepper

Olive oil



1. Pre-heat the oven to 180c/ 350f/ gas mark 4.

2. Remove the casing from the Kabanos Sausages and cut them into 1 inch pieces. Set aside.

3. Peel the potatoes and roughly chop them into chunky (about the size of a small roast potato) and set them aside.

4. Place a large oven proof casserole dish or saucepan on a medium heat. Pour in a couple of teaspoons of olive oil then add the sausage pieces and let them sizzle in the oil for 3 or 4 minutes, tumbling them round regularly.

5. Scatter in the onions to the pan, mix them with the Kabanos and let them gently fry and soften for 5 minutes.

6. Add the grated garlic, stir it into the onions and carry on cooking the mix for another couple of minutes.

7. Add the smoked paprika, herbs, a good pinch of salt and pepper, tomato puree, potatoes and both tins of tomatoes to the pot then 3/4 fill one of the empty tomato tins with fresh water, pour it in and mix everything together really well.

8. Add the beans, stir them through then cover with a lid or tin foil. Pop the dish in the oven to cook for 45 minutes which will let the mix cook down to a delicious, rich, tasty casserole.

9. Carefully remove the pot from the oven and stir though the chopped spinach to wilt into the casserole.

10. Serve in warm bowls with a drizzle of olive oil, some crusty bread and tuck in!
