Pink Grapefruit, Avocado & Green Chilli Salad

This is a delicious, refreshing salad which feeds a crowd - perfect to serve with a BBQ on a hot sunny day!

 

Serves 6 - 8 

 

2 pink grapefruit

5 or 6 spring onions

1 cos lettuce

1-2 green chillies, depending on you heat taste!

1 handful of mint leaves

1 handful of basil leaves

1 avocado

Sea salt

Freshly ground black pepper

Olive oil

 

Method:

1. Top and tail the grapefruits then stand them on one of the flat ends. Carefully trim off the skin and the white pith with a sharp knife, turning the fruit as you go. Slice each grapefruit then set them aside in a bowl.

2. Deseed the chillis before finely chopping them and placing them in a mixing bowl. Finely chop the mint and basil leaves and add them to the chilli. Drizzle over 2 tablespoons of olive oil and season to your taste with salt and pepper.

3. Cut off the root end of the cos lettuce and tare or roughly chop the leaves into a large mixing bowl. Finely slice the spring onions and add them to the leaves then drizzle over the herby dressing and mix everything together.

4. Nestle the slices of grapefruit in among the dressed leaves and drizzle over any juice left in the dish.

5. Remove the stone from the avocado, scoop out the flesh and slice each half before scattering over the the salad and serve!
