Ruby Radicchio Caesar & Vegbred Croutons

Radicchio lettuce has a punchy bitter flavour (a bit like pink grapefruit) and teams up really well with sweet flavours like root veggies and seasonal fruits or in this case with a punchy, garlicky Caesar-style dressing and crunchy croutons - This salad is bold, robust and full of flavour...

 You Bitter Believe It! 

Serves 4

4 slices of Vegbred of your choice
3 sprigs of fresh rosemary, thyme or both
2 tbsp Rubbies In the Rubble vegan mayo
The juice of 1 lemon
1 heaped tsp wholegrain mustard
4 tsp capers in brine
2 small gloves of garlic, mashed
1 small head of Radicchio
2 red onions
Freshly ground black pepper
Olive oil


To make the croutons…

1. Pre-heat the oven to 170c/ 350f/ gas mark 4.

2. Cut the bread into 1 inch cubes and place them in a roasting tray. Pull the rosemary leaves off the stalks and scatter them over the bread then scatter in the whole sprigs of thyme. Season with a good pinch of sea salt and a few grinds of black pepper, drizzle with olive oil and gently tumble everything together. Place the tray in the hot oven and bake between 15 and 30 minutes or until the bread and the herbs are crunchy and crispy. The cooking time will depend on the bread you use so just keep checking on them every 5 minutes or so.

3. Once they are ready, set them aside to cool.

To make the dressing…

1.Finely chop the capers and transfer them to a small mixing bowl.

2. Mash or grate the cloves of garlic and add to the capers along with the mayo, wholegrain mustard, lemon juice and a good pinch of black pepper in a medium sized mixing bowl.

3. Mix together thoroughly and set aside.


1. Wash the whole radicchio and pat it dry in a tea towel.

2. Cut the radicchio in half then each half into really slim wedges - cutting from the core outwards. Place the radicchio in a large mixing bowl. 

3. Peel and finely slice the red onions and scatter them into the bowl with the lettuce.

4. Pour over the dressing and gently mix everything together with your hands to make sure all the lovely leaves are coated with delicious dressing!

5. Pile the salad in a big serving bowl or board then scatter over the crunchy croutons.

6. Pour over a little drizzle of olive oil and pile up some lemon wedges for people help themselves for extra zing!
