Rustic Italian Bean Stew

A rustic Italian bean stew packed full of veggies & flavour! If you fancy giving it an extra kick -simply add a chopped chilli when you're sizzling the onions and garlic!

Ingredients to serve 6:

2 onions, finely diced

3 garlic cloves, crushed

2 celery sticks, finely diced

2 carrots, finely diced

2 sprigs of rosemary

1 tablespoon of tomato purée

1 tin chopped tomatoes

2 tins of white beans of your choice 

1 vegetable stock cube dissolved in 1 litre of boiling water

6 or 7 stalks of kale, woody stems removed,  a good sized wedge of savoy cabbage or 1 sprout top roughly shredded.

Salt and pepper

Olive oil



1. Place a large saucepan oven a medium heat and drizzle in a tablespoon of olive oil.

2. Add the onions and garlic and allow to sizzle gently, stirring regularly.

3. Add the carrots and celery then continue to cook for 10 minutes to allow the vegetables to soften.

4. Add the rosemary, tomato puree, white beans and vegetable stock, mix everything together, bring to the boil and reduce to a simmer and allow to cook for 20 - 25 minutes.

5. Serve in warm bowls with some crusty bread to soak up the juices!
