Sensational Celery Soup

We’re celebrating celery! This amazing vegetable is one of the unsung heroes of the veg world so we’ve packed this soup with piles of it for a warming, delicious lunch or light dinner.


1 head of celery, washed and roughly chopped
1-2 white onions, peeled and roughly chopped
2 cloves of garlic, peeled and roughly chopped
1 good quality vegetable stock cube, dissolved in 1 litre of boiling water
Sea salt
Freshly ground black pepper
Olive oil

1. Place a large saucepan over a medium heat and drizzle in a couple of glugs of olive oil. Add in the garlic, give a stir and let it gently sizzle for 30 seconds before tumbling in the celery and onions. Lower the heat a little and let the veggies cook gently for 10 to 15 minutes until they begin to soften and making sure that they do not brown. Stir regularly.
2. Pour in the stock and season with a pinch each of sea salt and black pepper. Make sure that all the veggies are well covered with the stock - adding a little more boiling water if you need to. Bring to the boil then cover with a lid and lower the heat to a simmer. Cook for 30 - 35 minutes or until the celery can be crushed with the back of a spoon against the side of the pan.
3. Allow to cool a little before blending the soup until super smooth with a hand held blender or free standing blender.
Check and adjust the seasoning if necessary and serve hot in warm bowls.

We love this served with crusty bread or crunchy croutons drizzled with olive oil.
