Simple Singapore Noodle Stir Fry

You might have had Singapore Noodles from your favourite Chinese takeaway or Asian restaurant but guess what? They’re super simple to make at home!

This is bowl of chewy noddles and fresh veggies with the flavour dial off the scale! Packed with chilli, garlic, ginger and curry powder to give everything that signature Singapore Noodle punch!

 

Ingredients:

1 red onion, peeled and finely sliced

2 cloves of garlic, peeled and finely chopped

1 thumb sized piece of ginger, finely chopped

200g / 1 portion of Caulishoots, cut into quarters, lengthways

1 red chilli, finely sliced, seeds optional depending on how hot you like it!

6 sweet bite peppers, deseeded and sliced

250g of Asia noodles or noodles of your choice, cooked according the instructions on the packet

1 tablespoon of curry powder (we used one of the Bang Curry Spice mixes)

2 teaspoons of ground turmeric

2 tablespoons of Tamari Sauce

Olive oil or cooking oil of your choice

 

Method:

 

Before you start cooking, get all your ingredients ready according to the list above.

Cook the noodles according the the instructions on the packet then rinse them under cold water to chill them down and set aside.

 

1. Place a large frying pan or wok over a medium to high heat. Drizzle in 2 tablespoons of olive oil and scatter in the onions, garlic and ginger. Mix everything together and fry, stirring regularly, for 15 minutes or until the onions have completely softened and caramelised.

2. Add the the Caulishoots, peppers and chillis and tumble them together with the onions and garlic. Carry on stir-frying the veggies for another 3 to 4 minutes.

3. Meanwhile, in a small bowl, mix together the curry powder, ground turmeric, Tamari Sauce and 2 tablespoons of water.

4. Add the noodles to the pan, followed by the sauce and fry for another couple of minutes until the noodles a hot, jumbling everything together regularly.

5. Serve in bowls with an extra dash of Tamari or a drizzle of toasted sesame oil to your taste and enjoy!
