Smashed Avo, Eggs and Garlic Toast

Smashed Avo, Eggs and Garlic Toast

This combo has been #instafamous for some time now and adorns menus of many favoured brunch-time haunts but this is our version for you to make at home for an impressive weekend brunch to feed friends and family.

Ingredients to feed 4:
3-4 avocados, depending on their size
1-2 chillis, finely chopped (optional)
4 spring onions, finely chopped
1 small handful of coriander leaves, chopped
Olive oil
The juice of 1 lime
Sea salt
Black pepper
4 handfuls of baby spinach leaves
4 eggs
1 clove of garlic, peeled
4 generous slices of your favourite toasting bread for toasting

Method:
1. Half-fill a large, wide pan with boiling salted water, and bring it to a gentle simmer over a medium heat.
2. Meanwhile, scoop out the avocados into a large mixing bowl, and smash them with the tip of a metal whisk or the back of a large fork until you have reached a consistency you’re happy with – anything from chunky to smooth.
3. Add the finely chopped spring onions, chillies, coriander leaves, 1 tablespoon of olive oil, lime juice to the bowl then season with sea salt and freshly ground black pepper to your taste and mix everything together thoroughly.
4. Pop your bread in to toast then rub each piece with the clove of garlic and keep them warm by wrapping them in clean tea towel.
5. To poach the eggs, crack each egg into a little bowl and one by one, lower the edge of the bowl into the simmering water allowing a little water into the bowl then let the egg fall gently into the water in one fluid movement. Let the eggs cook for 2-3 minutes for soft eggs with runny yolks or 3-4 for a firmer egg. While the eggs cook, rub Once they’re cooked, left the eggs out of the water with a slotted spoon and place gently onto kitchen paper.
6. Plate up a piece of garlic toast per person, topped with a handful of spinach leaves. Divide the smashed avocado equally on top of the spinach followed by the poached eggs and serve straight away.
