Summer Pea Salad 

The English pea season is short and sweet so we like to take any opportunity for maximum pea-licious gobbling! This salad is so fresh, light and zippy, it couldn’t be simpler to make and it is a perfect partner to pretty much any meal.

 

Ingredients to serve 4 as a side dish:

1 Cos lettuce or 2 Baby Gem lettuces

5 or 6 spring onions

2 handfuls of shelled garden peas

The zest and juice of 1 lemon

2 tbsp of good quality olive oil

Sea salt

Freshly ground black pepper

Method:

1. In a large mixing bowl, big enough to mix the salad in, whisk together the lemon zest, lemon juice and olive oil along with a good pinch of sea salt and freshly ground black pepper. Have a little taste to check the seasoning then set aside.

2. Top, tail and finely slice the spring onions on an angle then add them to the dressing.

3. Trim the bottom of the lettuce then cut it in half. Finely shred each half and tumble the leaves into the bowl followed by the peas and mix everything together so the veggies are well coated in the dressing.

4. Transfer to a serving bowl or platter and enjoy!

You could use any robust lettuce for this salad... a couple of Baby Gem lettuces or a Raddichio lettuce would be a lovely substitute.
