Super Fresh Courgette Salad

The start of the British courgette season is here! Courgettes are delicious raw in salads, soaking up any dressing you add to them - this one is delicious as a light lunch or a refreshing side dish.


Recipe serves 4 people:

2 courgettes

1 fresh chilli, finely sliced or chopped

1 red onion, finely sliced

1 big handful of coriander leaves

The juice of 1 lemon

1 heaped teaspoon of wholegrain mustard

1 tablespoons olive oil

A good pinch of sea salt

A pinch of freshly ground black pepper



1. Make the dressing by putting the wholegrain mustard, lemon juice, olive oil, salt and pepper in a small mixing bowl or mug and whisk together with a fork. Have a little taste to make sure you are happy with seasoning - you can always add a little more salt and pepper or mustard then set the dressing aside.


2. Trim off the tips of the tops and bottom of the courgettes and either: spiralise them with a spiraliser OR peel them lengthways with a potato peeler OR grate them with a coarse grater - the choice is totally up to you depending on which gadget you have available!


3. Put the now prepped courgette in a large mixing bowl along with the fresh chilli and red onion. Roughly tear of chop the coriander leaves then add them to the bowl as well before mixing everything together.


4. Just before you are ready the serve pour over the dressing and mix everything together to coat the veggies and serve.
