Super Simple Curried Carrot & Chickpea Burger Recipe

Serve these stacked into a burger bun with all the trimmings, pile onto a delicious crunchy salad or enjoy simply as they are with a dollop of mango chutney.

What you will need to make 4 burger patties. 

1 x  400g can of chickpeas drained & rinsed

1 x Red onion peeled and finely chopped

2 x Carrots washed & grated

2 x Garlic cloves peeled & crushed or chopped

1 - 2 x tbsp curry powder

2 x tbsp of plain flour

50g parsley  washed & finely chopped



Olive oil


1. First of all get all your ingredients ready then the making the burgers  are super quick.

2. Grab a shallow pan and pop on a medium heat.

3. Drizzle in a tbsp of olive oil followed by onions and garlic and let cook and soften for 5 mins.

4. Add into the pan your grated carrot & curry powder. Stir together and allow to cook for a few minutes.

5. Whilst the veggies are cooking - pop the chickpeas into a bowl. With a potato masher (or fork if you don’t have one) roughly mash them, leaving some bigger pieces for texture in the burgers.

6. Into your chickpeas add your parsley and season with a good pinch of salt and pepper.

7. Now all your curried veggies from the pan can be added to the mashed chickpeas.

8.  Add your flour and give a good mix- the flour will help bind the burgers.

9. Time to get your hands dirty and make your patties

10.Mould these into 4 patties really squidging each one in your hands.

11. Using the same pan - pop back on a low / medium heat with another drizzle of olive oil. Add your burger patties and gently fry 5 minutes each side until golden brown (careful not to burn)

12. When ready remove from the heat. 


Top Tip - Double up the recipe and freeze. Wrap each one in some grease proof paper pop in the freezer for even speedier burgers next time.
