Sweet Potato, Garlic & Thyme Soup


The combination of sweet potato, garlic and thyme is a thing of pure joy… blitzed into smooth and creamy soup then combined with chunky chickpeas… and you've got yourself a bowl of delicious, vegtastic, scrumptiousness!

Ingredients to make 4 - 6 portions:
2 white onions, roughly chopped
4 garlic cloves
2-3 sweet potatoes, peeled and roughly chopped into chunks
1 tbsp thyme leaves
2 good quality veg stock cubes dissolved into 1 litre of boiling water
Sea salt
Freshly ground black pepper
1 tin of chickpeas, drained and rinsed
Olive oil

1.Pour a tablespoon of olive oil into a large saucepan and place over a medium heat.
2. Add the onions and garlic and allow them to gently cook for 3 or 4 minutes until them soften, stirring occasionally.
3. Add the thyme leaves and sweet potato before pouring in the stock. Top up the stock level with more boiling water if necessary to ensure the stock level completely covers the veggies.
4. Season with salt and pepper to your liking and bring to the boil and simmer for 35-40 minutes  or until the sweet potato is completely tenders and can be squashed with the back of a spoon against the pan.
5. Allow the mixture to cool a little before blending until silky smooth, either in a free standing blender or with a hand held blender.
6. Transfer back into the pan and adjust the thickness of the soup to the way you like it with boiling water.
7. Add the drained chickpeas and bring the soup back to a gentle simmer before serving in mugs or bowls.
