This is a delicious, salty, puchy sauce, ideal for slathering in a sarnie or dolloping on top of our funky 'No Fish Cakes'!
1 small red onion or 1 shallot, peeled and finely diced
3 teaspoons of capers, drained and chopped
A small handful of parsley, finely chopped
3 tablespoons of plant based mayo
Half a lemon
Freshly ground black pepper
1. Put the onion, capers, cornichon, parsley and mayo in a medium sized bowl and mix everything until the ingredients are well combined.
2. Squeeze in the lemon juice, catching any pips through your fingers. Add a pinch of salt and freshly ground black pepper. Mix together again and have a little taste to check you’re happy with the seasoning and serve!
