Tex Mex Black Beans With Tomatoes

This is a versatile jumble of Tex Mex inspired flavours and satisfying ingredients. We love them as part of a picky board with a fresh cucumber and mint salad and a crumble of Violife Greek style cheese or ideal for piling on toast with avocado and fresh chilli.


Ingredients for 2-4 portions:

2 cloves of garlic, peeled and grated

1 red onion, peeled and finely diced

A handful or 150g vine tomatoes

1 jar or tin of black beans, drained and rinsed

Dried oregano or mixed dried herbs

Smoked Paprika

Olive oil

Sea salt

Freshly ground black pepper



1. Place a large frying pan over a medium heat and drizzle in 1 tablespoon of olive oil.

2. Scatter the garlic and onion into the pan and mix together. Let everything gently sizzle for 5 to 10 minutes or until the onions turn translucent and soften.

3. Add the drained and rinsed beans to the pan, mix them into the onions and garlic and let the beans fry for a couple of minutes.

4. Sprinkle in 1 teaspoon of dried oregano and 1 teaspoon of smoked paprika, mix the seasoning into the beans and pour in half a cup of water. Bring the mixture to a simmer and let everything gently bubble for 5 minutes.

5. Add the whole tomatoes, a good pinch of sea salt and freshly ground black pepper. Mix everything together again and continue to cook for another 5 to 10 minutes or until the liquid evaporates, stirring regularly.
