The Ultimate Loved-Overs Sandwich!

Lucky enough to still have a few leftovers for Christmas Day?! Check out this whopper of a Crimbo sandwich! Not so much a recipe but more of a super delicious way of using up the last of your flavour packed nutroast!

Ingredients per sandwich:

2 slices of bread, we love using Vegbred Sweet Potato Sourdough

2 tsp plant based mayo

A handfull of watercress

A few slices of red onion

Leftover nutroast

1 tbsp chutney of your choice

Salt and pepper

Assembly:

1. Toast the bread until it's golden and crunchy.

2. On one slice of toast, slather the mayo, followed by the watercress and red onion. Sprinkle over a pinch of salt and pepper.

3. Now layer on a generous slice of your leftover nut roast, then dollop the chutney on top. Drizzle with a little olive oil and pop the other slice of toast on top!

4. Cut in half and serve! Theatrical rosemary skewer stick, optional!
