Veggie Breakfast Scramble

This is a delicious, savoury, plant based breakfast packed full of the good stuff to kick start your day! Use any veggies you fancy or have to hand from chopped courgettes, to shredded kale, spinach or sliced cauliflower. You can make this the night before and simply warm it through the next morning when you ready to eat!

 

Feeds 4:

1 block of firm tofu, drained

6 - 8 mushrooms, finely sliced

1 handful (about 200g) of Tenderstem broccoli, roughly chopped

2 handfuls of tomatoes

2 tsp ground turmeric

Sea salt 

Freshly ground black pepper

Tamari Sauce

Olive Oil

 

Method:

1. Place a large frying pan over a medium heat and pour in a tablespoon of olive oil.

2. Break up the tofu with your hands into the pan, sprinkle over the ground tofu, add a splash (about 2 teaspoons) of Tamara sauce and a pinch of salt and pepper. Mix everything together and let it cook in the pan for 3 or 4 minutes, stirring regularly.

3. Add the Tenderstem and mushrooms and continue to cook for another 5-10 minutes in the pan until the mushrooms soften and the Tenderstem steams through.

4. Add another splash of Tamari to your taste and enjoy!
