Veggie Miso Broth

This miso broth is quick to make, tastes amazing and is packed with so many veggies, you just know it’s doing you good.

 

To feed 4:

3 tbsp of Miso paste

2 cloves of garlic, crushed

1 thumb sized piece of ginger, grated

1 red chilli

1 red pepper, finely sliced

1/4 cabbage, finely shredded

2 flat mushrooms

400g bag of Tenderstem broccoli with the bottom tips trimmed off

2 courgettes, spiralised or peeled into ribbons with a potato peeler

Tamari sauce

 

Method:

1. Fill a large saucepan with 1.5 litres of water along with miso paste, ginger, garlic, chilli then thoroughly whisk together. Place on a high heat and bring to the boil.

2. Once the broth is boiling and the miso paste has thoroughly dissolved, add the red pepper, cabbage, Tenderstem broccoli and mushrooms then allow to simmer for 3 minutes.

3. Add the spiralised courgettes to the pot and allow to cook for a further 30 seconds and season with tamari sauce to taste.

4. Serve the vegetables and ladles of the hot broth in warm bowls.
