Whole Baked Onions

Onions are incredibly sweet when they’re baked and make a delicious, fresh tasting companion to any dish or as part of a picky board or as a veggie side!

To serve 4 as part of a main meal, light lunch or picky board you will need…

2 onions

4 sprigs of rosemary

8-10 sage leaves

2 tbsp olive oil

Sea salt

Freshly ground black pepper

Method:

1. Preheat the oven to 180c/ 350f/ gas mark 4.

2. Remove the papery outer layer of the onions and trim the very tips of the bases so that they can sit flat.

3. Make 2 cuts creating a cross from the top of the onions, stopping 2 thirds of the way down.

4. Tear off 2 sheets of tin foil big enough to wrap around each onion. Place the onions in the middle of each piece of foil.

5. Insert 2 sprigs of rosemary and 4-5 sage leaves into the incisions of each onion followed by a pinch of sea salt, some freshly ground black pepper and a tablespoon of olive oil over each them.

6. Wrap up each onion, bringing the edges of the foil to the top and scrunch together tightly.

7. Place the parcels in the pre-heated oven and bake for 45-50 minutes.

8. Once cooked, remove from the oven, carefully unwrap the foil and lift the onions out of the foil onto a warm serving dish or wooden board.
